Every week, right before we pick up the older girls from school, I take Isla on a date to Chipotle. When school was out for the holidays,
I’ve made this dish so many times that I knew exactly how much of each ingredient to use. Even though I probably should feel bad about that, I don’t.
It’s the perfect medium salsa to use as a dip or to put on all your favorite Mexican and Tex Mex dishes. It’s one of my best Mexican side dishes, in fact.

➥ Jalapeños – Fresh jalapeos give this tasty dip, spread, or side dish a lot of heat. Before dicing, cut the apple in half and scoop out the skin and seeds.
➥ Poblanos – Another delicious pepper to add a little heat to this salsa.
➥ Cilantro – I’m team cilantro, I love the flavor it adds but omit if you’re on the other team.
➥ Red Onion – Adds color and flavor. You can substitute white onion in a pinch.
➥ Corn – The best flavor comes from fresh corn cut off the cob, but you can use canned corn if you need to.
➥ Lime Juice – The bright flavors are brought out by freshly squeezed lime. You can substitute 100% Real Lime Juice in a pinch.
➥ Lemon Juice – Fresh is best again. You can use 100% Real Lemon Juice instead of fresh lemons if you don’t have any on hand. A squeeze of fresh lemon juice makes the tastes better.

- 1 1/2 cups fresh or thawed frozen corn kernels
- 1 teaspoon Kosher salt
- 1/4 cup red onion, finely diced
- 1/2 jalapeno, minced
- 1 tablespoon fresh cilantro, chopped
- 2 tablespoons lime juice, freshly squeezed
How To Make Chipotle Corn Salsa
Step 1: Salt the corn
Mix the corn kernels with 1 teaspoon of Kosher salt in a small bowl. Set aside.
Editor’s Tip: If you’re using frozen corn, try to drain and squeeze out as much extra water as you can before you salt it.
Step 2: Mix
In a separate small bowl, stir together the red onion, jalapeno, cilantro and lime juice.
Step 3: Combine
Add the onion-jalapeno mixture to the salted corn and toss it together. Season with additional salt and lime juice to taste.
Step 4: Chill
Put the salsa in the fridge and cover it with plastic wrap. Give the salsa at least an hour to cool down before serving.
Editor’s Tip: If you don’t have much time, you can serve the salsa as soon as you mix the ingredients. But when we tried it, we thought the flavors went well together after being in the fridge for a while.

We’ve already said that you should put the salsa in the fridge for at least an hour before serving to let the flavors blend.
Chipotle corn salsa can be kept in the fridge for two to three days after the first chilling. Corn salsa can also be frozen for up to 3 months (especially if you use these freezer storage tips).
Let it thaw in the fridge overnight before serving. Before serving,we suggest adding a pinch of salt and a squeeze of fresh lime juice to make the flavors stand out.
