- 1 yellow onion, chopped
- 4 cloves garlic, chopped
- 1 (3 pound) beef brisket
How To Make A Chipotle Brisket
- In the work bowl of a food processor, combine the tomatillos, chipotle peppers, tomato sauce, water, salt, and brown sugar. Process until smooth. Separate the mixture.
- The onion &garlic should be cooked and stirred in the olive oil in a pressure cooker with the cover off over medium heat for about 3 minutes, or until the onions are translucent. Set the heat such that the cooker creates medium pressure when the pressure is up and cook for 1 hour and 15 minutes.
- Remove the brisket after the pressure in the cooker has naturally released (without using the quick-release). With tomatillo sauce on the side, serve hot.
