  • 2 (11 ounce) cans whole tomatillos, drained
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 2 teaspoons salt
  • 1 teaspoon brown sugar
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 4 cloves garlic, chopped
  • 1 (3 pound) beef brisket

How To Make A Chipotle Brisket

  1. In the work bowl of a food processor, combine the tomatillos, chipotle peppers, tomato sauce, water, salt, and brown sugar. Process until smooth. Separate the mixture.
  2. The onion &garlic should be cooked and stirred in the olive oil in a pressure cooker with the cover off over medium heat for about 3 minutes, or until the onions are translucent. In the pressure cooker, place the brisket and brown it on both sides. When the tomatillo mixture is boiling, pour it over the brisket &cover the pot. Set the heat such that the cooker creates medium pressure when the pressure is up and cook for 1 hour and 15 minutes.
  3. Remove the brisket after the pressure in the cooker has naturally released (without using the quick-release). With tomatillo sauce on the side, serve hot.

Store: For around four to five days, beef brisket keeps nicely in the refrigerator in an airtight container. Reheat it for 20 to 25 minutes, encased in aluminium foil, in a low oven (300°F works).

After taking your brisket out of the freezer &putting it in the refrigerator for 24 hours, you may reheat it in a 300°F oven by wrapping it securely in foil (at least 30 minutes).

How to make slow cooker chipotle beef brisket

1 – Make the Marinade: In a small food processor, combine all the ingredients listed before the brisket and pulse several times to create a paste.

2 – Marinade the Brisket : Every surface of the brisket should be covered in the paste.

If you have the time, chill the brisket in the fridge for up to 24 hours after applying the rub. In order to have everything ready to go into the slow cooker when you wake up, prepare everything the night before.

3 – Slow Cook : At the bottom of the slow cooker, combine the OJ, chicken broth, liquid smoke and bay leaves. Depending on the amount of your brisket, place it in the slow cooker,cover it, and simmer for 8 –10 hours (see the full recipe for details).

4 – Reduce the Sauce: The sauce leftovers in the slow cooker should be cleared of the bay leaves and larger fat chunks. In a saucepan,pour the sauce.It should be reduced over medium heat until it reaches syrup consistency.

5 – Caramelize in The Oven: Broil is the oven setting. Use the reduced sauce to baste the brisket. When your brisket starts to caramelise, broil it for a few minutes, baste it again, then broil it for a few more minutes. Although broiling is technically optional, I strongly advise it because the brisket crust is so delicious.

Keep it straightforward; slice the brisket, arrange it on a tray, top it with more sauce and serve it with mashed potatoes and some roasted vegetables.
