Green cabbage: For a great crunch and complementary flavor to the romaine, cabbage makes for a fantastic salad base.
Romaine lettuce: Look for heads of romaine that are sturdy and substantial for their size when purchasing (with tightly closed leaves). The outer leaves should be dark green, appear crisp, and be free of any indications of wilting or rusty/brown colouring.
Black beans: We prefer the homemade saucy beans in this salad (discussed in the above paragraph). If using, remove them from the liquid and incorporate them into the salad. As an alternative, black beans from cans work great in this salad.

Red onion: If you’re sensitive to the flavor of raw red onion, soak the diced onions in salted ice water for 10 minutes. Drain thoroughly before adding to the salad.
Cilantro: If you don’t love the flavor of cilantro, replace it with green onions!
Chicken: While you can certainly prepare your own chicken, I like using leftover rotisserie chicken to keep things quick, easy, and flavorful for minimal work.
Fresh avocado: This Chipotle Chicken Salad has a wonderful, creamy mouthfeel thanks to the avocado. Only use avocados that are completely ripe; they make a significant difference in this salad. If an avocado gives to firm, mild pressure, it is ripe (feels slightly soft, but not mushy).
Pepitas: The finest ingredient to Chipotle Chicken Salad is roasted, crispy pepitas (pumpkin seeds)! They impart a nutty and sweet flavour that is somewhat sweeter than sunflower seeds. Pepitas can be made at home or purchased at a store. Make sure they are salted and roasted if you purchase them (not raw).
Typically, you can buy them in a grocery store’s bulk section or alongside other salad additions like candied pecans and dried cranberries.
How To Make Chipotle Salad
To the salad, add the raw corn. Toss the corn in the salad after simply cutting it off the cob, thawing frozen corn, or draining canned corn. The uncooked corn kernels in this salad have a great crunch and it’s very simple to make.
Corn is charred.Cook the corn on a grill pan, grill or in a nonstick skillet if you prefer it roasted or toasted. Here are more guidelines
Heat a sizable nonstick skillet over medium -high heat to sear canned corn. The well-drained corn should be added in one equal layer, followed by 1 teaspoon of butter or oil.
Allow it to sit, stirring every so often, until the corn has a good browning on the outside (I don’t stir frequently to ensure maximum browning!). The corn should be taken off the heat and left to cool completely before being placed aside.

Chipotle Salad Storage
With the dressing and avocado added, this salad doesn’t taste very good. If you won’t be eating the entire salad at once, toss it and adjust the amount of dressing to suit your needs.
This salad can be kept in the refrigerator for up to 3 days if the dressing is kept separate (with the exception of the avocado).
The avocado browns and develops a weird texture, so I add half of it one day and store the other half in the fridge with the exposed side coated with lemon or olive oil until I’m ready to make another serving.
